One of my personal tricks: popped amaranth. (On the white plate in the center). Put about 1 tablespoon of amaranth in a hot dry pan and shake it around like you are popping popcorn, and use a lid because that stuff goes flying! Then you can put it inside your sushi (or roll your inside-out rolls in it, if you are fancy) and it provides a pop and texture similar to roe.

Dad and I have a venerable, if newish, tradition of making vegan sushi together. We use recipes from The Veganomicon, and places on the internet. We indulged when Ari was visiting, because it’s always nice to have an extra pair of hands around the kitchen. Or an extra pair of hands to keep the kids out of the kitchen.
