Dandelion Honey

We read about making dandelion honey in various places on the internet so we decided to try it ourselves. The instructions vary, but I think it’s really simple actually. We ended up gathering way way too many dandelions and had some extra work to do afterwards because we gathered the whole blossom and not just the petals. Anyway, it was a good experiment. And tasty!

One page we read said 100 – 200 flowers, so we let the kids loose and hoped for the best.

I should have read some of the better blog posts more closely, because you only want to use the yellow/white petals … the greens make it bitter!

preparing the gathered flowers

Back home, we discovered that we should only use the petals so we went about picking out the petals. Having picked the flowers hours before, though, they had closed and were a pain in the ass to process. You only need 4 cups, though, which really isn’t all that much.

boiling the mixture

So, you soak the petals in boiling water overnight then the next day boil them with a bunch of sugar and lemon. I let it go too long, forgetting that it will thicken when it cools as well. We ended up with something more like dandelion-caramel-molasses. But it was good on toast!
